Larian keeps some ears out to hear what the players say, but they never said how they do it, what place is monitored more, or what type of feedback is easier for them to process. As for how exactly they use telemetry, we've heard them talk about how they can track death locations, save/load locations, skill usage, item usage, chosen dialogue options, etc. Larian stated that they only collect data anonymously.
